Asian Chicken and Mango Salad

Sesame-Soy Dressing

1 1/2 tablespoon(s) fresh gingerroot, peeled
1 1/2 teaspoon(s) garlic, minced
2/3 cup(s) canola oil
1/3 cup(s) rice vinegar
1 1/2 tablespoon(s) toasted sesame oil
1/4 cup(s) reduced-sodium soy sauce
1/4 cup(s) water
2 tablespoon(s) honey
1/2 teaspoon(s) freshly ground black pepper
Salad

1 store-bought rotisserie chicken
1 large ripe mango, halved, pitted, and diced
1 large seeless cucumber, quartered lengthwise, cut into chunks
1 small red onion, thinly sliced
1/2 teaspoon(s) kosher salt
8 cup(s) mixed salad greens
lime wedges, for garnish

Directions

Dressing: Combine the sesame-soy dressing ingredients in a 2-cup jar; cover jar with a tight-fitting lid and shake well to dissolve the honey. Store covered in the refrigerator up to 3 weeks.
Salad: Remove skin and bones from rotisserie chicken and pull into long shreds. Toss chicken in a large bowl with mango, cucumber, red onion, and salt. Add 1/2 cup of dressing and toss to lightly coat. Serve chicken salad over watercress or mixed greens. Garnish with lime wedges.

Cold Avocado Soup

Ingredients

1/2 seedless cucumber, chopped
1 medium avocado, peeled and pitted
1 shallot , chopped
2 tablespoon(s) plain yogurt
2 tablespoon(s) fresh mint
1 sprig(s) fresh mint
4 teaspoon(s) fresh lime juice
1 1/2 teaspoon(s) salt
1/4 teaspoon(s) ground black pepper
1/4 teaspoon(s) ground cumin
1 radish, chopped

Directions

Place the cucumber, avocado, shallot, yogurt, 2 tablespoons mint, lime juice, salt, pepper, cumin, and 1 cup cold water in a blender, and process until smooth.
Chill for at least 1 hour. Serve garnished with the radish and remaining mint leaves.

(CNN) -- Chalk another record to the United Arab Emirates' collection.

The Capital Gate building in the desert kingdom's capital, Abu Dhabi, has been certified by Guinness World Records as the "World's Furthest Leaning Man-made Tower."

How far does it lean? Nearly five times farther than the Leaning Tower of Pisa in Italy.

The 35-story Abu Dhabi building has an 18-degree slope, compared with four degrees for the freestanding bell tower.

But unlike the tower in Pisa, the Capital Gate building has been deliberately engineered to slant.

"It is a signature building which speaks to the foresight of the emirate," said Sheikh Sultan Bin Tahnoon al Nahyan, the chairman of the building's owner, Abu Dhabi National Exhibitions Company.

The mixed-use building will be ready for occupancy at the end of the year. It is featured in a new National Geographic documentary, called "Megastructures."

Chatting with Cassie Campbell (Canadian Olympic Women's Hockey) last week, and Cassie shared not only is Hockey important, but moreso team sports for women and how that is important and builds a foundation of fitness and friendships. Women's hockey is very important, and although it's far more "cool" to play hockey these days, it hasn't always been that way. In fact, even our Gold Medal 2010 Olympic womens team almost didn't have a league to play in this year. Even here in Canada!

Now: Bluetooth bling. In 2010, perhaps mom needs a blinged-out piece of Bluetooth to compliment her mobile phone. A hands-free solution for her ear, neck, wrist or a broach-style device can be fashionable (especially when it's decorated with coloured Swarovski crystals) and functional, as it lets her chat while keeping her eyes on the road.

Then: Sony Walkman. It wasn't too long ago that a music-loving mom might unwrap a portable tape player, such as the almighty Sony Walkman. But it was bulky, you had to wait to "rewind" and "fast-forward" to other tracks and you could only play five songs before needing to flip over the tape.
Now: iPod or satellite radio. If your wife or mother could use a new tech toy, an iPod can store literally thousands of tunes in something as small as a pack of gun, while satellite radio can stream CD-quality music to the car, and doesn't switch stations as you drive from one city (or province or state) to another.

Ok, shameless endorsement, perhaps. But some reasons to go. There is a new Hed Kandi open in HOTEL ARTS centre and it's very nice. This one replaces the old location that was down by Eau Claire. I think they were tearing that building down or something.

Anyhoo, I've always thought guyz cuts are best done by a guy... so that's how I found Hed Kandi and now go see Tyler and all is well. The second best reason (and my point today with this blog) is BUMBLE and BUMBLE. Great product! Now, it's not a cheapy, that's for sure. But head to Hed Kandi, get your color/cut/whatever, and ask them to test drive some BUMBLE on your salad. You'll love it!

Did is mention you should go to Hed Kandi? There also is a location in Bankers Hall too, if that's easier...

My Torchbearer experience

The pic is me in the foreground. It was right when I lit the torch from James Grieg on Main Street in Airdrie.

Carrying the torch was amazing. The Torch host Pierre-Luc jokes before the relay that carrying the Torch comes in a close second behind having kids for "best moments in life". The obvious question is, "Well, what about getting married?" Response: "You can't have your babies again, you won't carry the torch again and you can get married any day". I'm not sure if I personally agree with that, but they certainly are correct with qualifying for the best moments of your life.

A rock star for 2 moments... that's what it is. It's 2 moments because when you arrive at your starting place in the relay, everyone wants a picture with you; You're a rock star! And then you light your torch, and the world fades away. Rule #1, don't forget to smile. Rule #2, still don't forget to smile. That is the advice you're given. Rule #3 should be try to not cry TOO much. The world faded away... and became quiet. It all got so quiet. In fact, I didn't even hear myself breathing. For a couple of minutes, it seemed the world went away.

Before you run you're told "If you don't complete your task that you were hand selected for today, the torch relay will end 300 meters before the Cauldron in Vancouver, and the games cannot begin. So enjoy it." And I did... and will cherish it forever. Then, you see the end coming and the next Torch Bearer nervous as heck, waiting. It's still quiet... but you light her torch (in my case, Nora from Air Canada) and off she goes. It's still so quiet. Then, you snap out of it with an RCMP officer right in your face with "Congratulations! You did Canada proud" and he turns the key to shut off your torch. People in the crowd run out and hug you and take pictures. It's loud now, where did these people come from? Rule #1, don't forget to smile. Rule #2, still don't forget to smile. It's the picture for your mantel! You have 15 seconds to get on the bus. And it's done. Thank you Coca Cola, thank you James and Nora, thank you Pierre-Luc and thank you to my bride for being at the finish line for that picture for the mantel.

The last question Torch Bearer's get asked is, what did you do with your torch? I gave it to my Dad.

Some words to really consider...

My friend Kjarlune Rae hosts a Clairvoyant show here on Energy... that's how we met, but not how we're friends.

Today she posted a rather raw account on facebook. And I wanted to share it with you, as sometimes a good gut check is a nice reset for us.

KJ is a friend to some, confidant to most and counsellor to others. But she's real, and has her own life to live. I'm grateful that she shares parts of it with me, and really proud that she's confident enough to allow me to share it with you.

For some time now I have been sharing little tid bits of insight into the law of attraction on my status's. It is time for me to change this up a bit. For the rest of the week at least I am going to share times of my life that I had to gain the courage to make the changes required to have a great life. I have delved in...to your lives for many years and now it is your turn....hugs KJ

I hold onto many memories that I have through the trials because they give me the chance to always remember where I have come from...

I remember the day I realized I was in my life way over my head. My husband at the time had come home from work a few days before and informed me that there was no money to pay the bills. He was mad and high at the time and made it clear with such sweet words I was good for nothing and didn't even motivate him to try harder. I begged for 200 to pay the gas bill so our new born baby could have heat, being Late October the sun wasn't going to be enough. We had just gotten a disconnection notice from Direct Energy..I was babysitting a friends 3 children from my house during the day to make sure my baby has diapers and formula, but 200 extra was going to be impossible. Needless to say I was thankful for small blessings and I had a electric heater that would sit in baby's room to keep her warm, with me sleeping on the floor by her crib for fear of a fire... Boiling water on the stove to bathe her was doable, anything is doable when you don't have a choice.

I didn't let on to my friend that I had to boil water to clean, for the kids etc out of fear she would pull her kids out. If that happened there would be no way to feed my baby. ... See More

Pay day oh how sweet those days were... I remember asking my friend to keep an eye on the kids for 5 minutes while I ran to the store accross the street for formula, stating specifically I would do the rest of my dishes the second I got back. I ran like a mad woman in hopes that nothing would go amiss while I was gone. Huffing and puffin running back into the house with formula in hand, my at the time worst fear had come true.

There she was, boiling water on the stove to clean my dishes. She walked up to me wrapped her arms around me and said..."When are you going to think you are worth enough to get out of this?" no judgement just question.....

As you can imagine I broke. The first day of the rest of my life was that day. I left my husband that afternoon... Straight for the Calgary Emergency Womens shelter I went. Some of you may look at this with sadness. This day has been one of my best days of my life. This day I made the decision, went past my fear, stepped out of my comfort zone and ... See Morebecome ME! Olympic Torch Relay - Zack's Segment

OK, when Coca Cola called me, I was ecstatic. Kristy asked me if I would accept the honor of being a torch bearer... I almost didn't know what to say! YES!

So, I've found out now that there was a panel of people from many different organizations that selected all the entrants from iCoke.ca and other contests. Reading essays, and suggesting who the Torch Relay participants should be. Over a million entries... 4500 winners. How did the radio guy get on board? I didn’t sleep much Sunday night; in fact, I starting writing this blog in the wee hours of the morning, a lot earlier than normal.
I have so many things running through my head, so many questions that I wish I had answers to. This season was not supposed to turn out this way, not with this team, not with this talent. I honestly thought we would win back-to-back championships.
I couldn’t wait to see the way this city would respond to having its team playing for the Grey Cup at home. I used to day dream about seeing McMahon packed with 45,000 dressed in red, the noise, the excitement, the drama. Opportunities like this do not come around very often. We are privileged to be in the position we are in as pro athletes and quite frankly, we didn’t get it done. There are no more “re-dos” or “get ’em next week”; we’ll never know just how special it could have been.
The 2009 football season was very difficult. We worked extremely hard, and I feel like we did the little things that it takes to win. I thought we battled through a lot of adversity and showed flashes of dominance. Many different guys played through injuries, gritting their teeth to do what was best for the team. We just couldn’t find the consistent groove we needed to get the job done in the end. Like I stated earlier, I wish I had the answers because this wasn’t the way it was supposed to end!
I want to dedicate the rest of this blog to our FANS and say THANK YOU from the bottom of my heart. There are so many things you could spend your hard-earned money on, yet you choose to support us. That support means the world to us players and I want you all to know that. A loss like this is not only hurtful to us players for personal reasons, but it also hurts because we disappointed you. So once again I say Thank You and hopefully 2010 will bring better results!
